All around interesting book not only about sushi - "The modern term sushi does not refer to fish, but to rice. Rice seasoned with rice vinegar, sugar and salt. Any food made with this rice can be called sushi, wether it involves fish or not." - and how to eat the stuff right but Japanese cuisine in general. It also includes how miso and dashi are made and "how ancient buddhist vegetarian condimets are used to make american factory meat palatable".
